CAMPING RECIPES
LINDA JACKETT
BARBECUE BEEF CUPS
#1 Barbecue Beef  Cups 2 cans of refrigerated biscuits.  (the cheap kind really work best)this will make 20 --10 from
each can --but can be increased to infinity
1 -11/2 #s ground beef -- can use a tube of ground turkey (increase meat to the amount of biscuit cup you are doing)
Some bottled barbecue sauce -it takes about 3/4ths of a bottle
Grated cheese of your liking -- I used a cheddar/Colby
mixSome onion and garlic to your taste

Directions:      Spray muffins tins (the number will depend on the biscuits you have, each cup takes 1 biscuit) with
non-stick spray top edges also.  VERY IMPORTANT for the removal of the biscuits.  Separate the biscuits and press
into the muffin cups.  They will NOT necessarily reach the top.  Try not to make them too thin on the bottom as the
beef mix will leak out.      Brown the meat with some onion and garlic.  When brown add the sauce to look wet -- not
quite as wet as sloppy joe mixture.  Heat a little to warm the sauce. No need to cook more.    Spoon beef mix into
muffin tins with the biscuits, about 3/4th full.    Top with some grated cheese.    Bake about 10-15 minutes at 350o
until the biscuits look set and slightly brown.  They should not be brown just look like they are going to be brown.
(how's that for a blonde way of telling directions!:) Cheese should be melted. Once you make these  you will get the
hang of it for your oven.     I let them sit for about 5 minutes to set before I take them out of the muffin tins.  You can
make these in batches if you only have 1 12 muffin tin.     (I found at BIG LOTS store disposable foil muffin tins and
they work great for these if you don't want to wash the muffin pans. It's the only store that I have found them in if
anybody knows of another source please share I make these all the time.)    Sorry this is so wordy but it is more
about directions than the ing.
