SERRO SCOTTY CAMPER ENTHUSIASTS
Baggie Omelets

Use 1 quart, good quality, freezer bags.
Have everyone put their name on the bag with a permanent marker.
For each omelet:
eggs - 1 or 2 (2 makes a good size omelet)
vegetables - chopped - any you like in an omelet - if
using tomatoes, remove the seeds so they aren't
watery.
meat - chopped or crumbled - again, any you like in an
omelet.  If using bacon or sausage cook it first.
cheese - shredded - again, any you like
salt & pepper
other seasonings optional
Note:  do not add any liquid

Ingredients can be placed in bowls for an omelet "bar".
It works good to have a coffee cup to break eggs into & then pour directly
into the freezer bag.  Add other ingredients and seal bag - make sure it is
sealed tight.
"Squish" the ingredients until well mixed.
Bags are then placed in large pots of boiling water and cooked until done
- you can tell by removing a bag with tongs and feeling to see if the
omelet is firm.  It usually takes about 20 minutes but depends how many
bags are in the pot.   Simply "dump" your omelet out onto your plate and
enjoy!  And, no pans to wash!!
